If I remember last year's cook-off correctly, there were a few comments about none of the chili being hot 'n spicy. I hope that this year we'll be able to light a fire in the judges' bellies.
Not sure if I'll be able to compete this time, but I hope to come and sample the entries.

Ya must not have sampled my 3rd place entry. There is a difference between 'hot' and 'spicy'. Normally, I get complaints that my cooking endeavors are too hot. I purposefully turned down the heat last year to appeal to the masses. There was plenty of spice, but maybe this year I need to burn 'em a new one. Up To No GoodFlaming Mad

Are we gonna have them suthern-biased judges again this year? As Rebel told me ... it's time to start scraping the roadkill.

I'm hurt, cut to the quick! Yep, we've got some southern judges as they need to be close to home in case of "emergency" but we do have some new methods of ensuring fairness. Details will go up on the cache event page when it gets posted.

That doesn't mean, however, new Paypal accounts. roll on floor laughing

I am not questioning the integrity or fairness of the past judges at all. It was great fun ... I just didn't have the right recipes for those suthern judges. I am reworking my alternative Sout Looziana recipe and renaming it after a great Black Oak Arkansas tune ...

p.b I didn't think you were. We're taking one more step to ensure that the judges have no way of knowing who made which chili. While I trust the judges implicitly, I just want to make sure that no one can take issue or harbor ill feelings.

I'm really looking forward to sampling that there Cajun chili!

Its too bad my g/f just moved up to Nc. Im sure she would love to come up with some kind of HUngarian chili dish to make for everyone. I may just have to get her to think something up and tell me how to make it! Only problem is she wings it way better then I do!!!

Tweaking recipe and making a test run today. It's close, but I think I need to locate a local supplier for more Allimagator and/or Andouille.
Until then - Harry's - here I come.

Ratz ... (and no, that is not my secret ingredient Up To No Good). I cannot get Allimagator in time for my pot of 'Hot & Nasty'. That's OK, tho - I'll just put a little more Andouille in it.

AND - in defference to my buddy (that I will not name - <cough>T3<cough>, I have eliminated the beans from my recipe. He convinced me that chili does NOT have beans in it. That's why the label on the cans say 'Chili with Beans'.

Let the argument begin ..... Sneaky

phat.bak, sorry about your ingredient issue. That would have been nice. A little "tail" is always a nice thing to be added to an agenda or recipe. Anyway, I have to agree with T3. Chili ought not to have beans. I hope to make the cook-off for that reason.
